Blueberry Almond Baked Protein Oatmeal
Blueberry Almond Baked Protein Oatmeal is a dietician-designed breakfast built around rolled oats, vanilla protein powder and eggs. It's made for GLP-1 medication users managing constipation, with protein kept high and portions sized for a smaller appetite.
Ingredients
- 2 cups rolled oats
- 60 g vanilla protein powder
- 2 piece eggs
- 350 ml reduced-fat milk
- 200 g reduced-fat Greek yoghurt
- 150 g fresh or frozen blueberries
- 2 tbsp chia seeds
- 1 tbsp ground flaxseed
- 40 g flaked almonds
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Preheat oven to 180°C.
- Combine oats, protein powder, baking powder, cinnamon, chia and flaxseed.
- Whisk eggs, milk, yoghurt and vanilla together.
- Fold the wet ingredients into the dry mixture.
- Gently stir through the blueberries.
- Pour into a lined baking dish.
- Sprinkle with flaked almonds.
- Bake for 35–40 minutes until golden.
- Cool for 10 minutes before slicing into six portions.
